Ingredients:
· 1 lb. Raw Shrimp Peeled & Deveined
· 1 Tbsp. Old cBay Seasoning
· ½ Tbsp. of Garlic Powder
· ½ Tbsp. of Onion Powder
· Ground Black Pepper (to taste)
· 14 oz. Bag Slaw Mix
· ½ C Finely Chopped Cilantro
· 2 Tbsps. of Avocado or Olive Oil
· 8 Corn Tortillas
· ½ C 2% Fat Plain Greek Yogurt
· ¼ C Low Fat Mayo or Miracle Whip
· 1 Lime
· ½ Tbsp. of Taco Seasoning
· ¼ Tsp of Pink Himalayan Salt
· Pinch of Red Pepper
Instructions:
1. In a medium bowl, add shrimp, garlic and onion powder, old bay, and ground black powder, mix and set aside.
2. Sauce: In a small bowl, add Greek yogurt, mayo, juice from lime, taco seasoning, ground red pepper. Stir until well blended.
3. Heat large non-stick skillet on med-high heat and add seasoned shrimp. Cook shrimp until orange and browned on the bottom, flip and cook until shrimp is fully cooked (no gray).
4. In a large bowl, add slaw, cilantro, salt, and most of the sauce (set a little aside to drizzle on shrimp). Mix together.
5. Assemble tacos: Spray a large skillet with spray butter and heat on high. Heat tortillas for 30 seconds per side and pressing down with a spatula. Fill each tortilla with 3-4 shrimps, some slaw mixture and drizzle with sauce.
